The yellow peels should be at least half browned, and the bananas inside squishy and browning for a better flavor.
200g of vegan butter (or vegetable oil)
70g of caster sugar
50g of agave syrup (honey if you aren't vegan)
135g of whole wheat flour
135g of oat flour
1g of baking soda
8g of baking powder
3 over ripped bananas
50g of dark chocolate chopped (70%)
pinch of salt
cinnamon to taste ;)
Preheat the oven to 180ºC.
Prepare your loaf pans with baking paper or butter your pan.
Make a batter with sugar, agave and vegan butter whisking all together.
In a separate bowl, whisk together flour, baking soda, baking powder and salt.
Prepare your banana puree, smashing with a for the bananas and at that to the mixture.
Put in the oven for about 25-30 min, until is golden brown.
Remove from oven and turn loaves out onto cooling rack immediately. Let cool down.
Suitable for vegan and for gluten free just swap the whole wheat flour with any gluten free flour of your taste.
