As Jack Johnson sing, if we make pancakes we can pretend to be weekend all the time!
Normally we would go for a savory breakfast, but there is always that time we cannot avoid to do a sweet one, and what is best then some delicious pancakes. We love then nice and soft, with some volume adding any sort of fresh fruits, yogurt and topping up with maple syrup or honey! Yummy! :)
portion from to 2 to 3 people
- 90g plain flour
- 90g whole wheat flour
- 1 tsp baking powder
- 1 tsp salt
- 2 tbsp caster sugar
- 200ml milk (almond milk or any other dairy)
- 2 large egg, white of the egg beaten
- olive oil, or coconut oil for cooking
When baking, there is one and simple rule before mixing all ingredients. Always separate the dry ingredients from the wet ones.
1 - Start to put plain and whole wheat flour in a bowl. Add the baking powder and salt.
2 - Separate the eggs. Beat the egg yolk with 1 tbsp of caster sugar and add the milk.
3- Beat the egg whites with the rest of the caster sugar until stiff.
4 - Pour the mix of the egg yolk to the dry ingredients, mix it.
5 - As last, add the egg whites and fold it. Do not over mix as this is what will give you fluffy pancakes.
6 - Cook the pancakes in a hot pan with a drop of olive or coconut oil and turn then as soon as you start to see bubbles on top.
You can your enjoy your pancakes with all sorts of combinations, with fruits, cream, jam, maple syrup or honey. Enjoy!
